Sourdough Baking with Pistrina Sourdough Bakery

Charlie Johnston, founder of Pistrina Sourdough Bakery, takes you through the sourdough bakers process step by step, debunking the myth that it is too complex for the home baker. You’ll discuss the importance of fermenting grain and the benefits it has on your gut health and micro biome. Charlie worked as a chef and baker in some of the world’s most prestigious restaurants. In 2018, he returned to his roots in Bristol to open Pistrina and introduce his baking to the South West. Years of researching the microbiology of sourdough has allowed Pistrina to create a signature taste profile, and baking hundreds of loaves allowed them to perfect it. To Pistrina, simplicity is key to creating a real depth of flavour, so they only use three natural ingredients: stone ground organic flour, water and sea salt.
