British charcuterie – a food revolution

British charcuterie has come along way in the last 10 years, from being virtually extinct, to enjoying a host of British producers making delicious, high quality products specific to their place and environment.

In this tutored tasting workshop, two of the UK’s best producers will take you on a whistle-stop tour of British charcuterie, from salami, to air-dried hams: James Swift, founder of multi award-winning Trealy Farm Charcuterie and Illtud Dunsford of The Charcutier, a Food and Farming Awards finalist this year and one of Heston Blumenthal’s Young British Artisans.

Participants will taste a range of products, develop a deeper understanding of how they are made, and learn more about how producers balance tradition and innovation to create delicious new products.
